These potatoes are SO GOOD! My recipe is for 50 people, but I will try to cut it down for about 6. If you would like the recipe for a large group if you are having a big party or something just let me know!!
Roasted Red Potatoes
adapted from Dixie Regional Medical Center
Yield: 6 servings
Ingredients
2 lbs. red potatoes, cut into quarters
1/2 cup ranch dressing (our buttermilk ranch dressing would be AMAZING!)
1/4 pkg. ranch dressing mix
4 pieces bacon, cooked and chopped
1/4 cup parmesan cheese
Directions
Preheat your oven to 350 degrees. In a large mixing bowl add potatoes, ranch, bacon, and ranch packet and mix well. Place mixture on a greased sheet pan. Cook for 30 minutes. Sprinkle parmesan cheese on top.
Cook for another 10 minutes, or until fork tender.
We normally serve these potatoes with a pork chop or steak, but really they would be good as a side to just about anything! The ranch I think is what does it for me! I eat ranch on nearly everything (pizza, tacos, fries, etc.), so it's no wonder I am in love with these potatoes :)
